A significant amount of the stuff off the 66 mustang will sell unless you totally butcher up the removal process and that includes sheet metal parts. I recently needed to buy an outer rocker panel for my passenger side because the aftermarket stuff is junk. I found somebody selling a complete inner/outer rocker so I got it. There is a significant amount of money in what you have removed from the car including in the sheet metal but it has to come out intact which means drilling out a lot of spot welds. I'm talking about potentially a few thousand bucks.

Heidts, Mustangs to Fear, Total Control Products and Total Cost Involved(I'm sure there are more) all sell coyote kits engine conversions the 66 mustang and they fit the stock mustang dimensions. You don't have to slice the car into and widen it unless you just want to. That means among other things custom front and rear glass and a whole lot more.

They delete the shock towers and use a full lower cross member with the r & p bolted on. They also can provide the front suspension out to and including the spindles, tubular control arms, coil overs and disc brakes. These kits use as much of the stock mustang metal as is appropriate and what they need to keep for the kits to work. If you plan to custom "re-fab" the whole inside guts of that car you are taking on a tremendous amount of extra and un-needed work. Since you have already gutted it this comment is a bit late.

Another more fundamental thing is that the suspension from the coyote was engineered for the coyote. That includes travel limits of the control arms, coil spring rates and strut/shock compression and rebound rates. Most likely, all of that will have to be changed when you go trying to put all of those parts on a 66 mustang. That is why companies like I listed previously build kits for this installation.
